Green Eggs and Ham
March 2, 2016 will be the 102nd anniversary of Theodor Seuss Geisel's (aka Dr. Seuss) birth. Some fans will be eating green eggs and ham in his honor.
Personally, I found scrambled eggs sauteed with a little spinach or other fresh green (like radish tops) to be delicious. So, here's my recipe: Heat frying pan on medium low, add a pat of butter (1 Tablespoon) and melt, meanwhile...break open 3 eggs into a bowl, beat with a fork, add a little water (1/4 cup or less), pour into frying pan. Rinse, pat dry and finely chop about 1/4 handful of fresh greens (spinach, radish tops, or parsley). Toss into the frying pan. Sprinkle with salt and pepper (I prefer cayenne pepper) and stir around until the mixture has thickened and cooked through. Serve with Ham.
